This place is great! First time visiting. Small local feel. And good people behind the bar. The food was quick to show up, very affordable and incredibly yummy. The coleslaw was fresh and tangy without being overly runny. The brisket was tender and juicy. And the fries where seasoned pretty darn good as well. Being close to home, we will be back many times over.

"Welcome home" vibes, a clean space, and perfectly-priced BBQ make The Vault an instant classic. When I initially visited a year back for St Patrick's Day, it'd be very generous to call the experience "a mixed bag". Since then, and on a less busy day, The Vault has cleaned up beautifully. The barman was welcoming and quick on his feet. The sign out front read "BBQ is ready" and, sure enough, when I asked for the run-down, he talked me through the spread. In the end, a 1-meat 1-side plate won out. I requested the brisket (which was great, and generously portioned, though a bit dry to be the best in town) and the street corn (which was incredible, and definitely the best in town). It seems BBQ is becoming a competitive business in Salem! The Vault is keeping up with the best of them, but here's the real kicker: the plate came out to only $15. For meat of that caliber and quantity, not to mention the elotes, that's beyond a steal. If The Vault continues to offer this level of quality in service, food, and drink, any early-days missteps while finding their footing will be drowned out by the good times they roll out. I hope they can keep this momentum and continue to offer exceptional service complementary to great good and drink.

As a displaced Southerner, I approach BBQ in the PNW with caution. Two bites into the pork belly and I was instantly a ten-year-old again eating the food my father and uncles worked for days to prepare. The Vault is what happens when Down Home Comfort Food meets haute cuisine - homemade, fresh, extremely generous portions of authentic, perfectly prepared fare. The BBQ is phenomenal and the sides are delicious as well. Corn was still snappy, the fries were hot even delivered, and the tacos are phenomenally flavorful without being loaded down with spice. Try the jalapeno poppers which are *obviously* hand made! The burgers are juicy and freshly-made to grilling perfection, and the Alabama white sauce will knock your socks off. The prices are ridiculously low, as I would happily pay twice the asking for the generous portions and extremely high quality of ingredients ... not to mention the obvious love, skill, and pride that go into the food. Bonus: no Styrofoam containers here, but reusable aluminum pans that just need a quick wash packed skillfully to avoid using too much container. And where else can you play cribbage while enjoying your food and superbly crafted cocktails?

Really good food at great prices. They'll even deliver to you if you're drinking at the wine bar next door! Would recommend the pork ribs, beef brisket, mac and cheese, and elote corn.
